Big Bowl Feed: Chicken & Prawn Laksa

COOK & PREP TIME: 20 MINS
SERVES: 4-5
INGREDIENTS
½ tsp sesame oil
1 x 230gm jar authentic Thai Laksa soup paste
600gm chicken breast, sliced
2 x 400ml cans coconut cream
2 kaffir lime leaves, torn slightly
1 x tsp fish sauce
Juice of 1 lime
1 x tsp brown sugar
150gm snow peas
1 bunch bok choy
1 x green capsicum, sliced
250gm cooked prawn cutlets (tails on)
500gm Hokkien noodles
100 gm bean sprouts
Coriander leaves (optional)
Sliced fresh red chilli (optional)
METHOD
Place noodles in a bowl and cover with boiling water, allow to stand while you make the laksa.
Heat oil in a large wok or deep sided fry pan, add laksa paste & fry till reduced a little, fragrant & oil is starting to separate. Add the chicken and then toss through the paste. Cook for a few minutes until the chicken has just started to change colour.
Pop in coconut cream & half fill the empty cans with water to clear out any left over cream, add this to the laksa and bring to a simmer. Add the kaffir lime leaves, lime juice, brown sugar & fish sauce.
Introduce the capsicum, snow peas, bok choy & prawns and simmer for 3 mins to soften the veggies.
Place a serve of noodles in each bowl and top with laksa. Garnish with bean sprouts, coriander, fresh chilli and lime wedges.
