Crunch Time: Winter Loaded Nachos

COOK & PREP TIME: 20 MINS
SERVES: 4-5
INGREDIENTS
500gm beef mince
1 sachet taco seasoning
1 jar taco sauce
2 x 125gm cans black beans, drained and rinsed
1 bag corn chips
200gm shredded tasty cheese
1 avocado
2 tbsp coriander leaves, chopped
Juice of 1 lime
Medley of cherry tomatoes, finely diced
Sour cream
Jalapeño chilli, sliced
Lime wedges to serve
METHOD
Place your beef in a medium saucepan on high heat and cook for 10-12 mins till browned. Breaking up the lumps as it cooks. Add the taco seasoning, taco sauce and beans. Simmer the mince for 15-20 mins.
Heat oven to 160 degrees.
Place corn chips in a shallow oven proof bowl or baking dish and sprinkle with half the cheese. Top with the beef mix, trying to lift up the chips and get the mix in between the chips so you have chips sticking up. Sprinkle with the remaining cheese and bake in the oven for 10 mins or until cheese has melted.
While the nachos is cooking, make the guacamole by smashing up the avocado with coriander leaves and lime juice.
Once the cheese has melted dollop on the guacamole, sour cream and cherry tomatoes and garnish with jalapeño chilli and coriander.
