Serving Up: Tandoori Chicken Burgers

COOK & PREP TIME: Up to 4+ hours including marinating time
SERVES: 4-6
INGREDIENTS
600gm – 800gm chicken thigh fillets
2-3 tbsp tandoori curry paste
2 tbsp natural yoghurt
Juice of 1 lemon
1 avocado
Juice of 1 lime
Long red or green chilli, finely chopped (optional)
Cucumber, sliced into ribbons
Gem lettuce leaves
Mango chutney @beerenbergfarm 1 cup natural yoghurt
Handful coriander leaves, finely chopped
Handful mint leaves, finely chopped
2 x spring onions, sliced
Tiger rolls or other hamburger buns
METHOD
Cut each chicken thigh fillet into 2 pieces, place in a non metallic bowl with tandoori paste, lemon juice and 2 tbsp natural yoghurt. Mix well to fully coat the chicken. Pop in the fridge and allow to marinate for 4+ hours.
Make smashed avocado by smashing the avocado with ½ the lime juice, some coriander, chilli (if using) & a little salt & pepper to taste.
Make the herbed yoghurt by mixing 1 cup of yoghurt with coriander, mint, spring onions & remaining lime juice. Mix well to combine.
Heat oven to 180 degrees.
Heat a grill pan on high heat & cook the chicken for 3-4 mins each side till chicken is nicely charred. Place chicken on a baking tray & cook in the oven for 15-20 mins till fully cooked.
Cut the tiger rolls (or other burger buns) in half & grill cut side down in the same pan you cooked the chicken in until charred. Spread bottom half of the roll with smashed avocado, spread the top half of the roll with mango chutney.
Place some lettuce leaves on top of the smashed avo, then some cucumber ribbons & top with the chicken. Dollop on the herbed yoghurt & finish with the burger top.
NOTES
If you don’t have 4+ hours to marinate the chicken even 30 mins will do, however the longer you can let it marinate the better.
If your family members don’t like coriander or mint you can leave it out however I highly recommend getting them to try it as it is delicious!
