COOK TIME: 3-4 hours

SERVES: 6

 

INGREDIENTS

1 tbsp olive oil

One medium brown onion, finely chopped

Single clove garlic, minced

150gm marinated olives

1 tbsp dried oregano

1 tbsp dried basil

100gm salami, (sliced from the deli) roughly chopped

3 anchovy fillets, mashed up a little

½ cup white wine

One 400gm can tinned chopped tomatoes

A 400gm jar tomato & basil passata

One chicken stock cube

2 cups water

2 bay leaves

A red capsicum, roughly chopped

One medium zucchini, roughly chopped

1 kg chicken breast/thigh fillets, cut into large chunks

Fresh parsley (to garnish)

Risoni (rice shaped pasta) & crusty bread to serve

 

METHOD

Pre heat oven to 170 degrees

Heat a large chasseur cast iron pan on high heat add the olive oil. Once it’s hot you’ll need to add the onion and garlic and reduce the heat to low/medium. Gently allow it to simmer until the onions have softened.

Add the olives, oregano, basil, salami, and anchovy and gently sauté to release the flavours. Next you need to add the white wine to deglaze the pan and allow to cook for a few minutes until some of the liquid has evaporated.

Put in the tinned chopped tomatoes, passata, stock cube, water, bay leaves, capsicum and zucchini and bring the dish to a simmer. Nestle the raw chicken pieces into the simmering sauce and put the lid on. Pop the dish into your pre heated oven for three to four hours until the sauce has become rich and thick and the chicken is nice and tender.

You can serve the chicken cacciatore with risoni and crusty bread to mop up all the yummy sauce.
