Dish Up: Cauliflower & Prosciutto Mac & Cheese

COOK & PREP TIME: 1 hour
SERVES: 6
INGREDIENTS
30gms butter
1 tbsp garlic infused olive oil
One leek, finely sliced
2 celery sticks
150gm sliced prosciutto, finely chopped
300gm macaroni
A medium/large head cauliflower, cut into small florets
3 tbsp plain flour
4 cups milk
A chicken stock cube
3 cups water
1x tbsp Dijon mustard
Salt and pepper
100gm cheddar cheese
1 cup panko bread crumbs
2 tbsp garlic infused olive oil
1 tbsp thyme leaves, finely chopped
METHOD
Place the butter and garlic infused olive oil into a heavy based cast iron pan on medium heat. Once the butter has melted add leeks, celery and prosciutto and cook for four to five minutes until softened.
Cook your macaroni in large pot of water for four minutes. Then add the cauliflower and cook for a further three minutes and drain immediately.
Add flour to the pan with leeks and prosciutto and cook for one minute on medium heat. Then add milk one cup at a time mixing well and allowing to thicken a little between each addition. Add the stock cube and water and mix well. Next you need to add mustard and salt and pepper and allow to simmer away for 5-10 mins till thickened. Add the cheese & mix well to combine and melt.
Put the bread crumbs, olive oil & thyme in a bowl & mix well with your hands till oil has evenly covered the breadcrumbs.
Add the drained pasta & cauliflower into a large baking dish or 2 smaller ones & pour over the creamy leek & cheese sauce. Sprinkle with the bread crumbs, sprinkle over a little more cheese & bake at 180 degrees for 30 mins till golden. I suggest grilling for the final 5 mins to make sure the top is golden and crunchy
Serve straight from the oven with a crisp side salad.
